Marshmallow brownie

With a little decorations, it makes the food looks better.....

Brownie coated with a "double doze" of chocolate fudge on top of the colourful marshmallow.... it may not look appealing but the taste is great...

Cream Puffs

No wonder why its so costly outside.....very tedious in the preparation....

Recipe for cream puffs: (Make 6 puffs)

FoR puffs:

Ingredient A:

  • 95ml water
  • 50g unsalted butter
  • 1/4 tsp sugar
  • Pinch of salt (if you are using salted butter, you can ignore this)

Ingredient B:

  • 50g bread flour
  • 20g cake flour
  • 1/2 tsp baking powder

Ingredient C:

  • 2 eggs (lightly beaten)
  • 1/4 tsp vanilla essence

For custard cream:

Ingredients D:

  • 75g Fresh milk
  • 1 egg yolk
  • 30g corn flour

Ingredient E:

  • 180g fresh milk
  • 30g butter
  • 50g sugar

Ingredient F:

  • 1 tsp vanilla essence

Method (puff):

  1. Mix well ingredient A in saucepan till bubbling hot. Turn off fire.
  2. Add in ingredient B in one go and mix with a wooden spoon till a dough is formed.
  3. Transfer dough to a mixing bowl and beat till it is lukewarm.
  4. Add in ingredient C slowly and mix till well-blended and smooth
  5. Place the mixture into a piping bag and pipe it onto a lined pan in rounds of 7cm in diameter.
  6. Bake at 200 degree for 20-25 mins till golden brown.

Method (cream):

  1. Mix ingredient D till well-blended.
  2. Bring to boil ingredient E, then slowly add in the mixture in step 1.
  3. Allow the custard cream to cool down before adding in the ingredient F.

Now you are ready to pipe the cream into the puffs....chilled before consumption....

Looks like a giant donut from the top without all the colourful icing and decoration....


Very rich in coconut and pandan flavour....texture is smooth.....perhaps should have baked abit longer to get the outer layer golden brown.....

Banana chocolate fudge cake
